Purpose:
Every Hazard Analysis Critical Control (HACCP) Plan is required to include verification procedures as a means of assessing its effectiveness and providing confirmation that the system works. As part of verification, audits are performed to compare actual practices and procedures with what is written in the plan. This workshop aims to help processors to appreciate exactly what needs to be done to make sure that the plan is doing what it says it will do. It will also help you to understand what the Department of Marine Resources will expect and what your buyers may require from you.
Participants:
- Processing plant managers.
- Internal auditors and/or HACCP Plan contact persons.
Qualification:
Participants must be familiar with their HACCP and Sanitation Plans.
Documents for workshop:
Participants should be familiar with and bring along their HACCP Plan, Standard Sanitary Operating Procedures (SSOP) documents and the records generated from these programs.
Timeframe:
The workshop is normally held over a 2 day period.
